Tasting Notes
It is deeply garnet in color and full-bodied with a profile of dark, dried cherry and blackberry perfectly balanced with hints of caramel, cinnamon spice, and tart cranberry. You’ll taste flavors of dried plum and a silky but structured mouthfeel. The acidity is perfectly balanced to support the sweetness and tannic structure of this wine, which finishes with a medium finish.
Winemaking Notes
We ferment each vintage our Port style wines down to about 8 brix of remaining natural sugar, then stop fermentation by fortifying with neutral high proof spirit. We follow that with a two-month extended maceration on the skins before pressing. The extended maceration helps smooth out the wine’s structure and quell some of the alcohol bite. The wine then undergoes extended aging in neutral barrels.
The base of this wine is from the 2018 vintage and comprised of traditional Portuguese grape varieties. It is fractionally blended with selections of port style wines from previous vintages that we have still aging in barrel. It is the first bottling of what we expect to be many future bottlings of this delicious Port style wine!
Food Pairing
This wine is the perfect accompaniment to any dessert table! We strongly recommend you pair this wine with a dark chocolate mousse with orange zest, take our word for it! Chocolate cake, chocolate truffles, gingerbread, cheesecake, and candied nuts are also great choices for sweet pairings. For savory pairings we suggest blue cheese, either on a cheese plate or as a dip possibly with some bacon and toasted, salted nuts on the side.
Aging
Aged in neutral oak barrels for a minimum of 36 months.
