Grilled Italian Sausage Sandwich

- 1 loaf of French bread, split lengthwise
- 1/2 cup butter, softened
- 1/4 cup parsley, chopped
- 1/2 tsp paprika
- 2 tbsps garlic, minced
- 5 Italian sausages, (hot or mild depending on your preference)
- 8 slices sharp cheddar cheese
- 3 red, yellow or orange bell peppers
- 1/4 cup Dijon mustard
Preheat your outdoor grill to 350˚F. Lightly oil grates and place the sausages and peppers on the grates about four inches from the heat.
Cook the sausages for about 10 minutes and turn to the other side and cook for about 10 more minutes.
Cook the peppers until tender and slightly charred. Remove the peppers and place them in a paper bag. Let them sit for about 10 minutes then remove the charred skins and slice into strips.
When sausages are done, (internal temperature of 160-165˚F), cut lengthwise and set aside.
While the sausages and peppers are cooking, mix the butter, garlic and parsley together to make the garlic butter. Spread the garlic butter onto the inside of each of the sides of French bread. Turn your grill down to low and place the bread buttered side down on the rack. The grill may flame up a bit, if this happens, close the lid or put the bread on a raised rack. Cook the bread until toasted and the butter is melted then remove from the grill.
To build the sandwich, spread the Dijon mustard on the bottom half of the toasted bread, then layer on the sausages, peppers and cheese. Cover the sandwich with the top piece of the bread and place back on the low heat grill, cover and cook until cheese is melted. Remove from grill, slice into five sandwiches, and enjoy with a glass of Spanish Cowboy.
Cooks Note: For ease, and if you are short on time, you can boil the sausage for about 10 minutes until almost done and then put them on the grill to get that smokey flavor and grill marks.
